Coconuts Restaurant’s provenance as Zihuatanejo’s oldest building isn’t the sole reason that it has become the centerpiece of the Zihuatanejo social scene but it certainly is a factor! All of the original adobe structure’s ironwork, handhewn wood beams, cedar doors and dimensions were preserved. Once this renovation was complete, Coconuts Restaurant was opened and has been a cornerstone of the community ever since.

David Dawson has felt the call of the kitchen and the ocean since an early age. A native of Australia, he left school at the age of 15 to move closer to the beach and to pursue his dream of becoming a chef. He trained in several of Australia’s best fine dining restaurants under Michelin Star-rated chefs hailing from Ireland and England. After several years of training in Melbourne and later Sydney, like most young chefs, he began to travel in order to expand his palate and experience. He was offered a position for the launch of the World of Residence Star cruise liner and was instrumental in defining its onboard restaurant experience. After two 6-month contracts, some great stories and a loop of the globe, David headed to Europe to pursue more chef experiences and opportunities. After arriving to snow storms in Prague and a no-show friend, David was left to make his own way around Europe where he wandered and sampled different cuisines.
